Basically anything made by Key/Bones, or was directed by Hayao Miyazaki is something you should look in to.

Gotta have an honorable mention for Death Note though. Death Note was one of the first anime I actually watched seriously and enjoyed, but I don't think I remember it as well as I should so I'm not going to put it up.

1. FLCL. Best animation ever, great music, great structure, and awesome for interpretations.
2. Cowboy Bebop. Great music and awesome story. It remind you to an old movie.
3. Neon Genesis Evangelion. Action anime with philosophic implications.
4. Paprika. Just awesome.
5. Ghost in the Shield - Stand Alone Complex. I like it more than the movie, basically because of Laughing Man.
6. Akira. A incredible ciber punk story.
7. Gurren Lagan. Gave us the best character of all times, and the most epic ending.
8. Slam Dunk. Incredible animation and draws.
9. Ghost in the Shield (movie). This is when Cyborgs become sexy.
10. Paranoia Agent. When a lie become reality.

4) The Twelve Kingdoms (though, it was never finished since the book series still isn't done)

In no order: Spice and Wolf, FLCL(and any Gainax works after it), Code Geass, Hellsing Ultimate(the OVA series), and Magical Pokaan(same character designer as Gurren Laganns, mixed with actually funny ecchi jokes, without a huge amount of unnecessary fanservice FTW). Honorable mentions: Naruto(the manga only though), Death Note, Witchblade, Soul Eater, and Hetalia Axis Powers.
