The deadline is midnight on December 25th, -9 GMT (That's 12AM in Alaska). However, you don't actually have to post at midnight -- that's just the final cutoff. You can actually post whenever you want on the 24th or 25th.

Once you have finished your Secret Santa request, it would be a good idea to send it to me just in case you aren't around to post it in time. Last year I ended up doing something like four requests on my own and others did two or three -- not cool. So, anyone who does not finish this year will likely be blacklisted the next time around.
